a bubbly and herbacious spritz for all of my witches out there!

ingredients//
lavendar simple syrup (1/4 c sugar, 1/4 cwater, 2tbsp edible lavendar)
sparkling water
yuzu (yuzu co)
butterfly pea flower tea
dried ice, regular ice
method//
start by making your lavendar simple syrup. add sugar, water and edible lavendar to a saucepan and bring to a boil. reduce to a simmer for about 15 minutes. strain into a glass and set aside. make your tea by adding butterfly pea powder to water and frothing - i also used some rose powder to get a deep purple color instead of a blue color. then, to a wine glass, add lavendar syrup, yuzu and ice to a glass. pour butterfly pea + rose tea over it, and top with sparkling water. mix and enjoy!
*honestly, i’ve stopped putting dry ice in my drinks for safety reasons… but it’s definitely fun! another great option is to batch this drink (without sparkling water) into a cauldron, and add a huge chunk of dry ice, then ladle it into wine glasses and top off with sparkling water. ENJOY!
