i promise this is 100x more delicious than it looks. lentils are so tasty and so good for you. this is the perfect salad when you're craving a hearty yet healthy lunch!
ingredients//
1 cup lentils
1 3/4 c chicken broth
4 large carrots, cut
thyme & rosemary
arugula
goat cheese
toasted almonds
pear, diced
olive oil
white vinegar
maple syrup
juice of 1/2 orange
dijon mustard
salt/pepper
method//
preheat oven to 450. first - cook lentils in instant pot. add lentils + broth + salt and pepper and pressure cook on high for 8 minutes with a 10 min natural release. meanwhile, toss carrots in avocado oil and season with thyme, rosemary, salt and pepper. roast in the oven until browned - around 20 minutes.
make your dressing by adding some olive oil (around 1/4 cup, maybe a bit more), white vinegar, a dash of maple syrup, juice of 1/2 orange, a scoop of dijon and salt/pepper to a mason jar and shake until combined.
when lentils and carrots are done cooking, mix together and coat with 1/4 of your dressing. add arugula to bowl and toss in the rest of the dressing. add lentil/carrot mixture over the arugula, goat cheese, pears & toasted almonds. enjoy!!
