salsa verde chicken flautas

another weeknight staple over here. once you make your chicken like this you’ll neverrrrr go back. wrap it in tortillas like i did here, add it to a taco salad, mix it into a quesadilla. options are endless — but save this + start with the flautas. thank me later. inspired by Jeanette Araña aka shutthekaleup !

ingredients//

2 chicken breasts

1 jar salsa verde

1 tsp paprika, 1tsp cumin, 1tsp salt, 1/2r so garlic powder

flour tortillas

olive oil for frying

optional: lettuce, cilantro, hot sauce, greek yogurt


method//

mix chicken, salsa verde and spices together in instant pot and pressure cook on high for 25min. quick release. shred with two forks and you’re done. (you can also cook in slow cooker on high for 2 hours). this makes about 6 servings of chicken. and you can keep it in the fridge for ~1 week. make flautas by rolling chicken into your flour tortilla. add oil to coat a pan, doesn’t need to be a ton. once hot, fry tortillas until crispy on all sides. place over lettuce with desired toppings.
