the og recipe is from Better Homes and Gardens & was introduced to me by Thomas and his family. it's in the top 5 of my favorite meals.
ingredients//
3-4 fuyu persimmons, peeled + sliced
1 large pomegranate
1/4-1/3 cup toasted pine nuts
1/2 bunch cilantro, chopped
1/2 jalapeño, seeded and diced
2 limes, juiced
method//
peel and chopping the persimmons into half moon shapes. add to a bowl. de seed out pomegranate {best way: cut pom in half. place in a bowl of hot water and slowly start to peel it so that the seeds fall into the bottom of the bowl. the skin will float on top. take them out and pour it all into a strainer and seeds remain}
add pom to persimmons and mix. add chopped cilantro.
juice limes in a bowl and add jalapeño to lime juice. let it sit for ~10 min. meanwhile, toast pine nuts on low-med heat until browned, then add to bowl.
-pour lime juice dressing over the salad and toss
