a summer salad series: because we all deserve to bring the best dish to our next bbq with friends. & lemme tell ya, this one SLAPS.
ingredients// (serves 2)
4 persian cucumbers, smashed
1/2 pineapple, sliced into chunks
1 cup edamame
1 tbsp coconut aminos or soy sauce
1/4 tsp chilli powder
1/8 tsp cayenne powder
1 small lime, juiced
1/4c cilantro, chopped
salt, to taste
to make//
mix together cucumbers + edamame. add soy sauce/coconut aminos and salt. mix in pineapple, chili powder, cayenne and mix. squeeze lime, add cilantro. mix and serve!
