pear + rosemary gin fizz // mocktail
pear is seasonal and we are all about seasonal dishes in this house. a winter drink that is almost too good to be true - make it, you won't regret it.
1/4 pear, cubed
1oz lemon juice
honey syrup (honey + hot water)
NA gin (optional)
method // muddle lemon peel, rosemary and cubed pear. Add lemon juice, pear juice, honey syrup, NA gin and egg white. shake vigorously without ice for 30 seconds. add ice and shake. pour into a coupe glass and garnish with rosemary and walnuts.
*i used pear juice from canned pears. It’s much cheaper!
*to make vegan, use 1oz aquafaba (the juice inside a chickpea can) instead of egg white!
