a tamarind and coconut margarita mocktail as an ode to mexican culture during this special time of year. i used tamarind pods to make a tamarind simple syrup and garnished with marigolds, the iconic flower of dia de los muertos — it’s tangy and creamy. add mezcal if you want it alcoholic. ENJOY!
ingredients//
1/3 cup sugar
1/3 cup water
6-10 tamarind pods

1oz tamarind simple syrup (OR tamarind paste)
2 dashes orange bitters
1oz orange juice
1oz lime juice
2oz water, NA tequila or mezcal
1oz coconut milk
ice + garnished with a marigold
method//
to make the tamarind simple syrp: add sugar, water and tamarind pods to a sauce pan. bring to a boil and and then simmer until thick, about 15 minutes. strain and let cool. to make your marg, add tamarind simple syrup, orange bitters, orange juice, lime juice, water/NA tequila or mezcal, and coconut milk to a shaker. add ice and shake until chilled. pour into a glass filled with ice. garnish with a marigold. enjoy!
