jennifer aniston salad
this salad went viral because jennifer aniston ate it everyday on the set of friends, and then that was proven to be a myth. this salad still slaps.
3.5 cups bulgar wheat
1 cup chopped cucumber
1/2 cup chopped parsley
1/2 cup chopped mint
1/3 cup chopped shallots (wayyy sweeter than red onion)
1 can rinsed + drained chickpeas
1/2 cup chopped pistachios
juice of 1 lemon
1/4 cup olive oil
salt & pepper
1/2 cup crumbled feta
mix all ingredients together and toss until evenly coated.
sub brown rice, farro, or quinoa for a gluten free option or if it's hard to find bulgar at the store!
