Instant Pot Salmon with Herby Yogurt Sauce

quick & delicious dinners are literally my favorite thing. this is a must-save for the next weeknight when you're like, "i want something super good but i don't want to spend a ton of time cooking"

the yogurt sauce used here is an adaptation of @andybaraghani's in his book, "The Cook You Want to Be" ! it's one of our favorites.


1 filet salmon

salt & pepper

plain greek yogurt

fresh parsley

fresh dill

1 pickle spear

brown or white rice

walnuts/hazelnuts (optional)


make your rice - i love adding toasted nuts to my rice personally! make your yogurt sauce - greek yogurt, fresh herbs, salt/pepper, and 1 pickle chopped up. mix together and set aside. season your salmon filet with salt and pepper, to taste. add 1 cup of water to the bottom of your instant pot and then add the rack into the pot. place the salmon on top. pressure cook for 3 minutes (or 5 minutes if cooking from frozen) - quick release. add rice to a bowl and place salmon on top. cover with yogurt sauce and enjoy. when i make this for dinner i usually roast a veggie like broccolini to have on the side!
