Heirloom BLT Sandwich with Homemade Corn Butter
it's givinggggg... living off the land while living in the city.
1 ear of corn
1 stick of butter
flaky sea salt/olive oil
to make your corn butter, boil an ear of corn until soft (about 8 min) and cut kernels off of the core. add to a pan with some olive oil and grill until toasted. add to a food processor with 1 stick of butter and salt. blend until smooth. transfer to a bowl and chill in the fridge for 10-15 minutes to harden. toast your bread, fry your bacon. add corn butter to your bread, then lettuce, then tomato - top with salt and olive oil - and then bacon. add another slice of toasted bread on top, cut and ENJOY!
