ingredients//
2 large handfuls of shredded kale
1 can chickpeas, rinsed
1 red pepper, finely diced
1/2 red onion, finely diced
1/4 cup peanuts, chopped
1/4 cup walnuts, chopped
4 dates, finely chopped
1 cup cooked quinoa

4 tbs olive oil
1.5 tbs honey
1.5 tbs dijon mustard
1/2 lemon, juiced
1/8 tsp garlic powder
1/2 tsp salt
freshly cracked black pepper
method//
massage kale in olive oil (this is the KEY to a good kale salad) then mix all ingredients together - add dressing and enjoy! makes 3-4 servings.
