an at-home version of my favorite salad in LA, from Scopa Italian Roots. no cooking required.
ingredients//
brussels sprouts
red/purple grapes
fresh parsley
pecorino romano
1/4c extra virgin olive oil
2tbsp sherry vinegar
1/2 tsp salt + pepper
toasted walnuts
method//
quarter or half your grapes. slice your brussels thinly or use a mandolin to slice them. chop parsley finely. add those ingredients to a bowl along with a good amount of pecorino romano. mix it all together.
dressing comes together by mixing olive oil, vinegar, salt and pepper. add it to the bowl and mix very thoroughly until soft - giving the brussels a massage with your hands helps to soften them as well. toast some walnuts + add them on top with more cheese. ENJOY.
*i wish i had more accurate measurements for this salad but what i love about it is that it’s hard to mess it up. do what feels right + tastes good, that’s the joy of cooking imo!
