Baked Salsa Verde Chicken Tacos

your new favorite weeknight dinner. because getting the most flavor out of a meal doesn't always mean you have to work too hard to make it.


2 large chicken breasts

1 jar salsa verde

1 tsp salt, paprika, garlic powder

1/2 cup plain yogurt

a few shakes of cholula sauce

1 tsp lemon juice

1 tbsp honey

warm water

salt, pepper, garlic powder

tortillas (i use @sietefoods gf)

queso fresco



preheat oven to 375. add your chicken, salsa verde, salt, paprika, garlic powder and some pepper to the instant pot. pressure cook on high for 25min & quick release. meanwhile, make your yogurt sauce. use more or less cholula depending on how spicy you like it. slowly add warm water to reach your desired consistency. when your chicken is done, shred it with two forks and transfer it back into its sauce.

lightly coat your tortillas in oil and then add your chicken and fold. place into your oven — mine isn’t super strong so i did about 8 min on each side. transfer baked tacos to a plate and cover with yogurt sauce, cheese and cilantro.
