vegan corn + potato chowder

soup szn continues with one of the easiest + most delicious recipes. creamy, nourishing and flavorful. this is a recipe i picked up from the @food52 vegan cookbook years ago!

ingredients// makes 4 servings

olive oil

4 cloves garlic, minced

1 yellow onion, diced

6 gold potatoes, diced

1 bag frozen yellow corn

1/4c+ coconut milk

2 cups veggie broth

1 tsp paprika

salt + pepper to taste


heat pot up with olive oil. add in garlic and onion, cook until softened. add in potatoes, paprika, corn, salt and pepper. pour veggie broth over ingredients, enough to cover the potatoes. bring to a boil and then simmer covered until potatoes are soft - about 20 min. add coconut milk (i just add however much feels right). use an immersion blender to break down the potatoes corn. you can also pour the soup into a high-speed blender and break it down that way.

to finish, i add olive oil, chives and extra pepper! enjoy!
