EGG FRITTATA MUFFINS

another busy morning breakfast - especially great for meal prep. use whatever toppings you want, and i always recommend topping with ketchup or hot sauce.



Egg Frittata Muffins


Ingredients: 12 eggs 1/2 yellow onion salt + pepper (to taste) 8 grape tomatoes 1/4 cup diced mushrooms 1/4 cup roughly chopped spinach

preheat oven to 350. crack eggs in a bowl and whisk in onion, salt and pepper until smooth. add cooking spray to a muffin tin and fill slots up halfway. chop toppings and mix together - add a little bit on top of each muffin slot and place in the oven for 15-20 minutes. enjoy! store in the fridge for 5ish days.
